Although I am fashionista who wants to look like those skinny models, I am also a real foodie. Culinary pleasures can get into the way of looking “good”. My food discovery of the year is the quinoa. Quinoa is a seed crammed with goodies – rich in iron and protein, and gluten-free. I tried a new recipe for a filling breakfast and thought I would share it with you: Sweet Cinnamon and Banana Quinoa.
Preparation time is relatively long (for breakfast), but it is really simple to make and makes for a great brunch.
Ingredients (for 1 person): quinoa, milk (3 times the amount of quinoa), one banana, cinnamon powder, natural sweeteners.
- Heat the milk gently to a boil in a saucepan, add the quinoa, reduce the heat and let the mixture simmer for about 15 minutes.
- Add about 1/2 teaspoon (or more) of cinnamon and your preferred natural sweetener. I usually add honey but maple syrup is good too. Then let the preparation simmer for another 8 minutes (add extra milk if needed) until you get a nice gooey consistency. Meanwhile, cut half a banana and mash it.
- Once the quinoa is ready, mix in the mashed banana. Cut the rest of the banana into slices and add them to the quinoa to vary the texture (blueberries are great too). Finish it in the way you like it, eg. throw in an extra helping of milk or cinnamon or other fruits.
